Beef puff is a puff pastry filled with ground beef and spices, served as an appetizer or a snack. The recipe is similar to the frozen puff pastry Hors d’oeuvre appetizers you find in stores like Costco, BJ’s or Sam’s Club that have a variety of different fillings inside. These homemade ones taste much better and you can make them with whatever filling you prefer.

The recipe calls for rough puff pastry, which is less time-consuming to prepare than traditional puff pastry. Rough puff pastry is made using pieces of butter (instead of a solid block of fat) that are incorporated into the dough in place of flour, creating layers similar to that of a pie crust. This creates flaky pockets in the pastry, but it requires a little more effort than rolling out regular puff pastry with a butter “block.”

To make this recipe, lightly dust a work surface and your rolling pin with flour. Roll out the puff pastry to a large rectangle, about 12×16 inches. Cut into two smaller rectangles.

Spoon 2 1/2-3 tablespoons of the beef filling onto each pastry square. Fold diagonally to form a triangle, being careful not to let the filling touch the edges of the pastry. Crimp the edges with a fork to seal. Transfer to the prepared baking sheets and chill for 20 minutes before baking.

Brush the tops of each puff with egg wash before baking. Beat the egg with a bit of water to help it spread and adhere. بف لحم
